Easter Pound Cake Parfaits

This stunning no-bake treat layers cubes of our moist, pound cake with fluffy, pastel-colored mousse made from whipped topping and colorful gelatin desserts. Decorated with festive Easter sprinkles and bunny icing decorations, these individual parfaits are as beautiful as they are delicious.


Whether you're hosting a spring brunch or looking for a fun kitchen activity with the kids, these colorful layers of sweetness are the perfect way to celebrate the season with a classic Drake’s twist.

Makes 4-6 Servings


Ingredients:

1 Carton Drake's® Cakes Mini Pound Cakes
1 1/2 Teaspoon Blue Gelatin Dessert Granules

1 1/2 Teaspoon Strawberry or Cherry Gelatin Dessert Granules

1 1/2 Teaspoon Grape Gelatin Dessert Granules

2 8 oz. Containers Whipped Topping, Softened

Water

Easter Sprinkles

Easter Bunny Icing Decorations


Supplies:

Disposable Piping Bags

Clear Dessert Cups or Glasses

Directions:

  1. Cut the Mini Pound Cakes with a round cookie cutter or knife to fit the shape of your dessert cup.
  2. Place the Mini Pound Cake slice in the bottom of your dessert cup.
  3. Next, in a small bowl, add the grape gelatin dessert and a 1/4 cup of boiling water. Whisk until the granules are fully dissolved, about 2 or 3 minutes. Add 1/4 cup of ice cold water and mix until the mixture is cool.
  4. Add in half of the 8 oz. whipping topping and thoroughly combine. Place the bowl in the refrigerator for 30 minutes.
  5. After 30 minutes, pipe or spoon a layer of the purple mixture onto the pound cake, leaving room for the other layers. Refrigerate for at least 2 hours before starting the blue layer.
  6. Repeat steps 3-5 with the blue gelatin dessert.
  7. After the blue mixture has refrigerated for 30 minutes, add to the top of the purple layer. Refrigerate for at least 2 hours before adding the pink layer.
  8. Repeat steps 3-5 with the pink gelatin dessert.
  9. After the pink mixture has refrigerated for 30 minutes, add to the top of the blue layer.
  10. Refrigerate for at least 4 hours or overnight before serving.
  11. Before serving, add any remaining whipped topping, sprinkles and the bunny decorations.
