Makes 8 Servings
Ingredients:
- 1 Carton Drake's® Cakes Yankee Doodles®
- 3/4 Cup Salted Butter, softened
- ¼ Cup Pistachio Butter
- 2 Cups Powdered Sugar
- ½ Teaspoon Vanilla Extract
- 1-2 Tablespoons Heavy Whipping Cream or Milk
- Dark Chocolate Candy Melts
Supplies:
- Parchment Paper
- Stand Mixer or Hand Mixer
- 1-2 Piping Bags
- Food Processor, optional
Directions:
- With a stand or hand mixer, mix the butter until fluffy. Then slowly mix in the powdered sugar.
- Mix in the pistachio butter and vanilla extract until fully incorporated and the frosting is piping consistency (you can adjust this by adding more sugar for a firmer frosting or more cream for a smoother frosting).
- Pipe or spread frosting on top of the cupcake.
- Finely chop pistachios that you have removed from the shell. You can also use a food processor.
- Sprinkle the chopped pistachios on top of the frosted cupcake.
- Melt the chocolate candy coating according to package instructions.
- Pipe a chocolate design onto parchment paper. Place in refrigerator for 15 minutes to set.
- Remove chocolate decorations from the parchment paper and place on top of the cupcake.
