Makes 4-8 Servings
Ingredients:
- 1 Carton
Drake's Cakes Cherry Fruit Pies
1 Cup All-Purpose Flour - 1 Teaspoon Ground Cinnamon
- 1/4 Teaspoons Salt
- 2 Teaspoons Baking Powder
- 1/4 Teaspoons Nutmeg
- 1 Tablespoon Granulated Sugar
- 2 Large Eggs
- 1/3 Cup Milk
- 1 Tablespoon Butter, melted
- 1 Teaspoon Vanilla Extract
- Vegetable Oil for Frying
- Powdered Sugar, topping
Supplies:
- Large Stock Pot, Dutch Oven or Deep Fryer
Directions:
- Unwrap each Cherry Fruit Pie and cut into bite-sized pieces. Set to the side.
- In a large bowl, whisk eggs. Add milk, vanilla, cooled melted butter and whisk together until combined.
- In a medium bowl, combine flour, sugar, baking powder, cinnamon, salt and nutmeg.
- Add dry ingredients to wet and mix until a loose dough is formed. Fold in cherry pie pieces.
- Fill frying pan with 3-4 cups of vegetable oil. Heat oil over medium, until it reaches 375-degrees.
- Use measuring cup to drop batter into oil, 1/4 or 1/3 cup at a time.
- Fry each fritter until golden brown on both sides, for a total of 4-5 minutes each.
- Use slotted spoon to transfer to paper towel-lined cooling rack.
- Repeat steps 6-8 until all batter is used.
- Sprinkle fritters with powdered sugar before enjoying!
